I am a stir fry queen. Here are a few quick and easy dinners.
Sauté sweet onion, squash, zucchini in coconut oil in a pan & add canned organic diced tomatoes with sliced chicken in coconut oil in a separate pan once it’s done combine and delicious!
Sauté mushrooms, garlic, sweet onion, green pepper in coconut oil & add cooked sausage…like a stuffed mushroom, yum!
Red, yellow, orange, green peppers with sweet onion in coconut oil & add cooked sliced chicken, my favorite fajita!
I hate leftovers but will actually eat all of these the next day so I make plenty for lunch.
Quiche with almond crust is my favorite breakfast. I make it on Monday & eat it all week.
sauté spinach, onion, mushroom & add cooked crumbled bacon 7-8 slices with 7 cage free organic eggs pour OT over the crust and bake 20-30 mins.
2/3.cup ground almonds
1/3 cup coconut oil
1/4 tap sea salt
2 tbsp h2o
Combine all ingredients except h2o add h20 slowly to thicken and put in a pie pan. I like mine on the thinner side Test your own preferences but it is a delicious quiche!
